The Culinary Operations Manager will lead a best-in-class Culinary, Banquet, and Food & Beverage Team, which is Rooted in Family for the Inn on Fifth. As the leader of this Team, the Culinary Operations Manager will work cross-functionally with the different facets within the team to meet guest expectations for all banquets and food service operations.
In this role, the Culinary Operations Manager will develop culinary delights for our pool service and events at the Inn on Fifth. Ensuring that the culinary and food service teams can properly prepare and present these delights to the Inn's guests.
Requirements:
Experience/Requirements:
- 2+ years' managing all aspects of a culinary and banquet operation
- Ability to manage, train and develop a food and beverage team with over 2 years' experience in a leadership role.
- 2+ years of years working as a Sous Chef. Banquet Sous Chef, or Jr. Sous-Chef.
- Completion of a technical culinary education or apprenticeship program; Certificate in Culinary Arts preferred.
- Food service permit or valid health/food
- Experience with various cooking methods and procedures
- Familiar with industry best practices
- Ability to speak and understand Spanish preferred.
Requirements:
- Leads team by example, collaborating with the Cooks, Club Level Lounge Attendants, Bartenders, Pool Servers, and the Banquet staff.
- Manage daily operations of food and beverage for Inn on Fifth
- Works with the culinary staff to develop kitchen team members and direct food preparation for Poolside Service, Club Level Service and Employee Lunch Service.
- Assign specific tasks and responsibilities to team members and prepare staff roster.
- Review BEO sheets and make notes of any changes.
- Work cross functionally with the Catering Sales Manager and the
- executive Meeting Manager to ensure banquets meet the standard of excellence expected by the guests at the Inn on Fifth.
- Ensure kitchen equipment, such as ovens, freezers, grills, food processers, etc. are in good working order.
- Monitor the physical inventory of kitchen equipment, supplies, and food items.
- Perform quality control by inspecting plates before guests receive them, ensuring the quality of the dishes are up to the standard excellence guests expect at Noble House.
- Order items as necessary and generate purchase orders.
- Develop new menu items.
- Incorporate new or different cooking methods and adapt dishes.
- Establish professional relationships with the team and provide educational opportunities to teach and develop skills and on other areas of the business.
- Maintain good working relationships with key suppliers.
- Work with the Banquet Captain, to execute banquets.
- Cultivate relationships with wholesale food suppliers, farmers, and other vendors, visiting sites and sampling ingredients.
- Assess the skills of existing team members and determine gaps or opportunities to recruit the right team members.
- Train and develop new team members.
- Ensure the kitchen adheres to all health and safety regulations.
- Coordinate training, to follow food safety guidelines and ensure all staff have adequate training in food hygiene practices, maintaining proper food storage and ensuring the quality of all ingredients.
- Manage guest complaints and work out solutions to ensure guests are satisfied with their dining experience.
- Monitor performance of team members and provide feedback or resolve issues as needed.
- Process payroll for team members.
- Assist in creating departmental budget.
- Manage food budget and profits and losses.
